Recipe: No-Fail Meringue

Baking is something I absolutely love doing, but it's also something I haven't had (read: made) much time for in the last year or so. But when family friends were invited round for Friday night dinner, and with one of them on a gluten-free and dairy-free diet, I knew this called for my no-fail meringues!

What you will need:

3 white eggs
175g (6oz) of caster sugar
a sprinkling of demerara sugar (optional)

Recipe for fluffy, light and super easy meringue

  1. Line a baking tray with silicone paper.
  2. Pre-heat your oven to about 150°C.
  3. Whisk the egg whites until they form soft peaks.
  4. Add in the caster sugar, a spoonful at a time.
  5. Whisk until all of the sugar has been folded in and you have a soft, fluffy mixture.
  6. With two dessertspoons, spoon the meringue onto the silicone paper.
  7. Optional - dust with demerara sugar.
  8. Slide the baking tray into the oven and bake for 1-2 hours, until firm and dry.

Your meringue should be light golden, crispy on the outside and deliciously gooey on the inside. Whilst it is all too tempting to dive straight in, leave the meringue to cool on a wire rack, covered by a tea towel – trust me, it will be worth the wait!

All that's left to do is to decorate the meringue with whatever you like. I naturally went for a drizzle of Nutella, but you could also whip up 150g of double cream and top with your favourite fruit for your own Eton Mess.
